Kiwi Strawberry Banana Chia Cups


SERVES ENOUGH FOR 2 PEOPLE!

INGREDIENTS

3/4 cup of chia seeds
One kiwi
Two cups of strawberries (fresh or frozen)
Two bananas (fresh or frozen)
2-3 cups of plant based milk (I prefer coconut or oat)
Half a cup of muesli / granola cereal
Dash of cinnamon

 

INSTRUCTIONS

First the chia seeds need to sit in a cup and a half or so of milk for 10-15 minutes until the chia absorbs the moisture. Add a dash of cinnamon, stir them up, put them in the fridge and do something else for 10 minutes because the smoothie portion only takes 3.5 seconds and we want everything done at the same time. So jam to some old school favorites and knock out those dishes, sweep the floor or organize a cupboard (some of that stuff in there is older than your pet, you’re not going to use it anyway so toss it). 

After 10 minutes of a life-altering experience, you’re ready to blend. Put the strawberries, bananas and a cup and a half of the milk in the blender. Once the fruit is a nice smooth texture, remove the chia from the fridge and add into the bottom of two short wide cups. Peel and slice the kiwi. For the visual aesthetics part, press the slices to the edges of the cups or you can chop the kiwi and put it on top. Pour the smoothie into the cups, leaving a bit of room for a bit of muesli and a few half slices of kiwi. 

The final and most important step is to grab some spoons and a good breakfast partner. Find a place in the house where the morning sun is shining through the window, take a seat and enjoy a healthy tropical breakfast in the sunshine with a loved one.
